Schezuan Brocolli Pahkoras/Bhaji
Pakhoras/ Bahji- Don't know if you have heard of this dish. It's an Indian classic. You might recognise it from the menu on an Indian restaurant. It's usually deep fried and dripping with oil.
So I made a healthier version Onion and Broccoli Pakhora/Bahji
Method
80 gm chickpea flour
Salt and pepper to taste
1/2 cup water and 2 tablespoons water
1 tbsp of schezuan spice mix ( I used more ) If you don't have schezuan, you can use tandoori, tikka, peri peri, moroccan or korma
Make into a paste - you don't want it thick or runny, it needs to be able to coat and stay on.
Cut the broccoli florets small and onion rings and coat in mixture.
I air fryer for 12 to 13 minutes.
You can spray with oil and chuck in the oven and see how it turns out.
