Hearty Breakfast Muffin Recipe
Hearty Breakfast Muffin - P2 and P3 suitable
Perfect for meal prep. Hubby and kids lunch boxes too.
Spray muffin tin with oil (P2 leave oil out)
Break 2 eggs in each muffin cup
Fill with tomatoes, spring onion, Kale add salt and pinch of classic pork spice blend in each.
Once all ingredients are in, whisk with a fork and bake 180 c for 18 to 20 minutes
Serve with 1/2 tsp of sour cream.
