- heat 2 tbsp coconut oil in a pan ( p2 leave oil out)
- brown 1/2 onion thinly sliced along with 1 tbsp garlic and 1 tsp ginger, 3 red chillies slit in half and handful of chopped coriander
- add 1 tbsp chicken stock powder to the above mix
- add 1 cup of thinly sliced and quatered zucchini cook till its 1/2 cooked about 2 to 3 minutes
- add 1 cup thinly sliced cabbage and cook 1 and 1/2 minutes
- add 1 cup sliced mushroom and cook for 2 minutes ( p2 substitute with 2 cups fresh spinach or 1 cup yellow squash (not pumpkin)
- add 1 and 1/2 tbsp of soy sauce and 1 tbsp of fish sauce and 1 tsp stevia and mix together and take off the stove.
Garnish with fresh coriander.
