Bacon Lentil Curry Recipe
Lentil Curry with Bacon and Grilled Beans
- 200 gm split moong ( alternatively you can also use red lentils, chick peas, green lentils)
- 1 large onion sliced
- 1 tbsp garlic
-1 tsp ginger
((((-3 dried chillies- 1tsp turmeric- pinch black mustard seeds - 10 curry leaves - 2 tbsp cumin- 1 tbsp coriander powder- 2 tsp garam masala ))) or alternatively just use 2 tbsp of mango spice blend or 2 tbsp of fiji spice blend
- 1 can whole tomatoes
- 2 tsp lemon juice
- 2 sticks of celery roughly chopped (can substitute with spinach, cabbage, silverbeet, Daikon radish)
- handful fresh coriander
- salt to taste
- 400ml water ( can add another 100 ml more water if you don't want it thick. This can be done after its cooked)
Dump it all in pressure cooker and cook for 25 minutes
Or
Dump it all in slow cooker and cook for 3 to 4 hours or till the beans are all mushy
P2- serve with zucchini noodles, zucchini chips, konjac noodles, konjac rice, cabbage slaw or salad or grilled asparagus (Skip the bacon)
P2 -This makes 5 serves. When it's finished cooking take the weight of finished product and divide by 5 for portion size as what you can eat will be more than 100 gms
P3- serve with P3 veges or as my picture grill 2 rasher of bacon in a pan with no oil, once that complete grill the beans in the same bacon oil. Add both to your dish and enjoy. Super Yummmmy.
P3- This makes 3 serves if having it with bacon as well.
