Chickpea and Zucchini Rendang Recipe
Method:
1 tbsp garlic
1 tsp ginger
2 tbsp rending spice blend
Handful of spring onions/ shallots
Fry in a hot pan together. If it sticks add some water and cook for 2 to 3 minutes .
Wash and drain 2 cans of chick peas - add to the spice mix
Also add 4 medium zucchini roughly chopped in even slices
Add 1 can of whole tomatoes
1 tsp stevia and salt to taste.
Stir together and cover and cook till Zucchini is completely cooked.
Add more chilli if you like chilli.
Once cooled take of the stove and add 3 tbsp cream.
This is 6 serves for P2 or 3 serves P3
