Ginger Soy Eggs
Made this again today as I haven't made it in over a year.
Boil 6 Eggs - cut in half and place on plate
In a ramekin mix 3 tbsp soy sauce and 1 tsp ginger
Pour mixture over eggs to soak. Extra mixture pout onto plate
Microwave 25 sec twice
Garnish with fresh coriander
Serve with veges of your choice. I served it with schezuan roasted tomatoes
Schezuan roasted tomatoes
Cut tomatoes in half, sprinkle with schezuan mix and salt.
Roast 160C for 20 mins or air fry 200C for 20 min
