Kale and Red Kidney Bean Roghan Josh Stir Fry Recipe

For P2 or P3 replace red kidney beans with chick peas or green lentils.
Method:
In a hot pan fry 1 onion sliced rough along with 6 to 8 pods of fresh garlic crushed. Add 160 gms of cooked drained chickpeas or green lentils, 1 tsp of stock powder, 3/4 tbsp of roghan josh spice blend and cook for 5 to 6 minutes and a handful of chopped coriander.
While the above is cooking. Roughly chop 1/2 a bunch of Kale with stem and set aside.
Add the chopped Kale to the mix aside and stir into the mix for a minute. Turn of the heat. Kale should remain slightly crispy and only cook with the heat left over in the the pan.
For P2 or P3 replace red kidney beans with chick peas or green lentils
P2- 2 serves
P3 - 1 serve and you can use 2 tbsp coconut oil to cook.
