Massaman Thai, P2, P3 -

Massaman Zucchini Chickpea Curry

In a hot pan fey 1 tbsp garlic and 1 tsp ginger with 1 and 1/2 tbsp of massaman spice blend.
Add dash of water if it sticks and fry for 2 minutes.
Add 480 gms of cooked drained chick peas and stir through, with 1 tomato, 3 chopped zucchinis, salt to taste, 1 tsp stevia, handful of chopped coriander and 1 tbsp of lemon juice.
Simmer for 10 to 15 minutes till zucchini is completely mushy.
Take of heat and stir through 2 tablespoons of cream.
Garnish with fresh coriander and some freshly diced red onion.
Enjoy with the family and serve with your choice of veges, or salad.

P3- you can add capsicum and cauliflower instead of zucchini.
