Schezuan Baked Salmon

With a bacon, cherry and broccoli salad.

Schezuan Baked Salmon

Preheat oven to 160c

Coat piece of salmon with 1 tbsp garlic, 1 tsp ginger, 1 tbsp lemon juice, 1 tbsp schezuam spice blend, salt to taste, 1/2 red onion, handful of corainder. Pack as a parcel. With baking paper. Cook for 15 to 20 mins.

Serve with broccoli and bacon salad.

In a pan add 1 tbsp butter, 2 rasher bacon and cook, add 1/2 red onion sliced, 150 gm of fresh cheeries (cheeries optional) 1/2 head broccoli florets, salt to taste and cook covered for 3 to 4 minutes until broccoli is cooked.

Garnish with fresh coriander and bean sprouts
