Sweet Konjac Payasam
Pour 1/4 cup of water in a shallow pan add 1 cinnamon stick, 2 cardamom pods, a pinch cardamom powder and a pinch of nutmeg, dash of vanilla extract, tiny pinch of turmeric or saffron and bring the water to boil so that the flavours infuse.
Then add 1/4 packet of washed konjac noodles to the above mixture and continue to boil to infuse the flavours. Taste the flavours at this point and if you want you can add more cinamon and cadamom for more spice based on your taste.
When you find that the water has evaporated add another 1/4 cup of water and continue boiling for 2 minutes. Then add 1 to 1 1/2 tsp stevia and continue boiling. You just want the stevia to melt. Do not allow to crystallise. Take off the stove and add a tbsp of cream.
This dish is meant to be a milky dish so you should be left with sufficient liquid.
Enjoy warm or cold.
