Tofu Chilli Con Carne Recipe

 

Method:

In a hot pan fry 1/ 2 diced onion, 1 tbsp garlic and 1/2 tap ginger.

Add 2 tbsp of chilli con Carne spice mix.
Add dash of water if it sticks.

Break up 800 gms Tofu into small pieces ( I used organic firm tofu from aldi) add the tofu to the above mix and coat and stir.
Add 5 tomatoes quartered and 4 sticks of celery sliced.

Add salt to taste.

1 tsp stevia cook for 10 minutes or so.

Have a taste and see if flavours are infused, if not cook for few minutes longer.
Add a dash of lemon and garnish with coriander. 

Serve with cauliflower rice or brocolli rice or with your preferred veges
