Whole Baked Cauli in Tikka Masala Sauce

Whole Baked Cauli in Tikka Masala Sauce- great way to make a vegetarian look more appetizing for the family

One medium whole cauliflower
1 ½ cups cooked brown rice/ cauliflower rice
Handful nuts to garnish
1 onion
Passatta Sauce
Cream/ Coconut Milk
Handful Herbs -Coriander

Directions
Pre heat oven to 180 c
Get your whole cauli and rub it all over with olive oil, place it in an uncoverd oven dish and bake in oven for sixty minutes or until done to your preference, I like it to retain some crispness to it.
While cauli is cooking,
In a large pan add a tablespoon of butter and place pan on medium heat, when oil is hot, add onions and sauté until onion is brown, then add 1 and 1/2 tbsp of mix together and cook for few minutes on medium to low heat.
Next add 1/2 cup passatta sauce, mix well and bring to boil, then reduce heat to simmer, cook for 5 minutes to reduce and thicken sauce to your desired consistency. Once you take of the heat you can add coconut milk or thickened cream.
Once cauli is cooked serve cauli on top of a plate of brown rice or cauliflower rice, ladle some tikka masala sauce over the top, then sprinkle with toasted almonds and coriander.
You can use any of the spice kits flavours to make this dish, if you want to trial another flavour like butter chicken etc.. If you want to add your protein to it , you can do so as well. Just follow the recipe you have been provided for the dish and serve with the baked cauliflower.
Cauliflower rice:
Blitz half a head of cauliflower in a food processor. Microwave for 5 min. Add some salt to taste and a 1/2 tsp cumin powder and stir through. You can stir through with some finely chopped coriander and a tbsp of butter for extra flavour
