  Mum's lunch this arvo.Asian Salmon Omelette - P3 suitableBeat 2 eggs with a 1/2 tsp of schezuan spice blend and 1 tbsp of soy sauce.Lightly butter pan. Pour the beaten egg over. Once it's almost cooked. Add either left over chicken or left over cooled salmon on top, till omellete completely cooks. In a hot pan add the garlic and onion with dash of oil and cook for 1 minute. Add 1 tsp of schezuan spice blend and 1 tsp of lemon juice and cook for 1 minute.

This dish is perfect for hiding all those veges kids or hubby don't like. If you have veges in the fridge that need to get used quickly this is a great way to cook it.  Method: So half fill your ceramic dish with all veges that needed to go beans, broccoli, potato, zucchini, carrot, capsicum, onion.  Add 1/4 cup milk and 1/2 cup cream 1 tbsp of schezuan spice mix, salt and pepper and mix.  Cook in preheated oven at 160C for 20 minutes Remove fro oven add grated parmesan ( you can  make this as cheesy as you like)...

- Preheat oven to 150 C - in a silicon baking tray. Line the bottom with onion, spinach, chopped coriander and thinly cut zucchini and cherry tomatoes sliced small. - Beat 4 eggs in a bowl with salt, pepper and 1tbsp Schezuan Spice Mix. - Pour over the veges and let sink in.
