Ginger Soy Eggs
Made this again today as I haven't made it in over a year.Boil 6 Eggs - cut in half and place on plate In a ramekin mix 3 tbsp soy sauce and 1 tsp ginger Pour mixture over eggs to soak. Extra mixture pout onto plate Microwave 25 sec twice Garnish with fresh corianderServe with veges of your choice. I served it with schezuan roasted tomatoesSchezuan roasted tomatoesCut tomatoes in half, sprinkle with schezuan mix and salt. Roast 160C for 20 mins or air fry 200C for 20 min
Massaman Zucchini Chickpea Curry
In a hot pan fey 1 tbsp garlic and 1 tsp ginger with 1 and 1/2 tbsp of massaman spice blend.Add dash of water if it sticks and fry for 2 minutes.Add 480 gms of cooked drained chick peas and stir through, with 1 tomato, 3 chopped zucchinis, salt to taste, 1 tsp stevia, handful of chopped coriander and 1 tbsp of lemon juice.Simmer for 10 to 15 minutes till zucchini is completely mushy.Take of heat and stir through 2 tablespoons of cream.Garnish with fresh coriander and some freshly diced red onion.Enjoy with the family and serve with your choice...
Fiji Chicken
Fiji Chicken. Oh my super yummy!! 1 onion 1 tbsp garlic 1 to ginger 1 can whole tomatoes 1/ 2 cup passatta 5 chicken thighs 2 tbsp Fiji spice mix 4 tbsp coconut milk ( skip if you don't like) 6 corn cobs. Curried Beef Noodles
Using the korma spice kit. Fry some garlic, ginger and onion in a pan add korma spice mix and fry , add beef and stir fry along with 1/4 cup of water. Add Veges if you like at this point, i just didnt feel like any. Add pre-cooked noodles in and continue stir frying for 4 to 5 minutes. Take off stove and enjoy. Creamy Tuscan Chicken
This was delicious. A nice creamy alternative to the usual tomato based sauce. Can also be used with Prawns and Fish. Made with the Tuscan spice mix. Marinate the protein in Tuscan spice mix for 10 mins. In a hot pan throw some diced onion and cook once cooked add the chicken, once one side is browned flip over to cook and add 1/4 cup of stock and salt to taste. Throw in the spinach, asparagus and cherry tomato and cook for 5 minutes with the lid on. Take off the heat and add some cream and stir through. Serve...
